I'm home from the hospital, recuperating from a total knee replacement. I have been overwhelmed by the kindness and generosity of my friends, who have stopped by with dinner and flowers and conversation.
My friend Gail brought lunch and dinner yesterday. After we shared a yummy lunch of chicken salad with grapes and croissants, she made beef stroganoff in my kitchen while I took a few photos. This recipe is fast, easy and delicious.
GAIL'S EASY BEEF STROGANOFF
Ingredients:
1-1/2# Beef Loin, Boneless Top Sirloin steak, fat trimmed, cut into thin slices
1 medium to large yellow onion, sliced into rings
1 box button mushrooms, sliced
1/2+ tsp. salt
1/4+ tsp. pepper
2 pkgs. brown gravy mix
3/4 cup sour cream
1 bag Wide Egg Noodles
Parsley
Directions:
1. Put sirloin in saute pan over medium heat. Add onion rings, sliced mushrooms, salt & pepper. Stir. Allow to brown. May need to add water to make juicier.
2. Prepare noodles.
3. When meat is cooked, add 2 pkgs. brown gravy mix and 2 cups water to pan and stir well. Allow mixture to bubble for about 3 minutes. Just before serving, stir in sour cream and chopped parsley.
4. Place cooked noodles on platter and top with beef & gravy mixture. Garnish with parsley and serve.
