Miss Nerva's Baked Catfish

Yield: 4 Servings
8 ea Catfish filets
2 1/2 c Cornmeal
1 tb Salt
1 tb Pepper
1 tb Lemon-salt
1 tb Lemon zest
1/2 c Butter melted
Mix cornmeal with the pepper & salts.
Dredge the fish filets through mix until all sides are well coated.
Place fish ona tray, cover with a towel & allow to rest for 20-25 mins. in refirgerator.
Pre-Heat oven to 400 deg-F.
Place filets skin-side down on a greased cookie sheet & bake for 30 mins.

I use this same method for other fish- white bass, sauger, bluegill, or catfish except I use an egg wash and panko. My husband has high cholesterol so we eat a fairly low fat diet. We call this "fried" fish!
