My version combines a low country type boil with a fish boil recipe.
1 lb catfish, cut into chunks
1 lb Andouille sausage, sliced
4 ears corn on the cob, halved
4 red potatoes, quartered
1 onion, quartered
Old Bay to taste, plus extra for serving
hot sauce for serving
melted butter for serving
Add ingredients from fish to onion to a large pot. Cover with water. Stir in Old Bay (I used about 2 T). Over high heat, bring to a boil.
Reduce heat to medium and simmer for about 15 minutes or til fish is flaky and potatoes are tender.
Serve with hot sauce, melted butter and additional Old Bay.
So simple and so good!

Well, I always wonder when people say that if it's a "health" thing or a religious thing. I know people who don't eat certain things because of their religion. Silly. Those foods (pork, seafood) were around long before the concept of religion.
i have never ate anything creole so i dont know what this would taste like but i would love to try it
