This is great to have for brunch on the weekends. You can add any extras you would like.
INGREDIENTS:
3 plain Bagels
12 Eggs
1/2 pound cooked Ham, chopped
1/4 cup Onion, finely chopped
1 medium Tomato, chopped
1 cup grated Cheddar Cheese
1 cup Milk
Salt and Pepper to taste
2 tablespoons Butter
DIRECTIONS:
Place the butter in a heavy skillet. Add the ham and onion. Saute over a low heat until tender around 2 minutes. Set aside.
Slice each bagel into 4 thin slices. Arrange 6 bagel slices at the bottom of a 13 x 9 pan, (lining with foil will make the clean up easier). Top bagels with the ham and onion mixture, then top with the cheddar cheese. Finally finish with the remaining bagel slices.
In a separate bowl, whisk together the eggs, milk, tomato, and salt and pepper to taste. Pour the egg mixture over the bagel layers.
Bake at 375 for approximately 30 minutes or until the eggs are firm and cooked through. Serves 4-6.
