National Sandwich Month 2008 ~ Day Two!
We here at Because of all the Sandwiches There strive to bring you all the most relevant and up to date sandwich news so I plan to tell you about at least one of my favorite sandwiches every day in August. I know, I know. It's a lot, but variety is the spice of life!
Today I share one of my favorites:

Chicken and Avocado.
The basis for this sandwich came from the first sandwich I ordered from a new (many years ago!) restaurant in Bend, Oregon called the Desert Deli. I was on my own for the first time and this was the first sandwich shop in town. All of the sandwiches had creative desert theme names (like the Saguaro - a veggie sandwich) since Bend is in the high desert and I fell in love with all of the inventive combinations. Okay, it was a combo of cream cheese, avocado, turkey, and sprouts on sourdough, but nevertheless, it inspired this one.
This sandwich (as many) can be served on any bread, but I especially like it on a croissant that is sliced in two. We poach chicken in a Tupperware microwave steamer (poaching liquid is usually broth, sliced onion, lemon, garlic and ginger with either parsley or tarragon sprinkled directly on the chicken), chill it in the fridge and then use a mandolin to get nice consistently thin slices. Spread a layer of cream cheese on the bottom half, layer on sliced chicken, add some slices of avocado and a squirt of Dijon mustard, and a grind of pepper and salt. Top it with the other half of the croissant.
