
I gathered the herbs out of my garden that I wanted to season them with: sage, greek oregeno, fennel fronds, garlic chives, thyme, parsley and lime basil a a few sprinkles of red pepper flakes and sea salt and cracked pepper.

I decided to add some onions and tossed with EVOO before I put on the herbs. I then put them in the oven at 200 degrees for about 7 hours flipping occasionally. They turned out good!

We had chicken breasts on the grill last night and just a plain white rice (what Bill likes) I had a helping of my roasted tomatoes on the side. They were great! I've stored the remainder of what was left in a small mason jar and keeping it in the fridge for next time. :)
Now if anyone sees anything I'm doing wrong let me know as this was my first attempt at these. And I kinda winged it..lol

LOL@ Shannon I barely had any for this. 3 red and 2 yellow ones. I do have several 'getting' there now on the vine. :)
Thanks Lindy! I never used to would eat any tomatoes raw or cooked Lindy. It's just the last few years I like them cooked. I still can't do raw..nope...ick..lol

If so it's called blossom end Rot...and it's fairly common. There more info on it here:

As the name of the disease implies, symptoms appear only at the blossom end of the fruit. Initially a small, water-soaked spot appears, which enlarges and darkens rapidly as the fruits develop. The spot may enlarge until it covers as much as onethird to one-half of the entire fruit surface, or the spot may remain small and superficial. Large lesions soon dry out and become flattened, black, and leathery in appearance and texture.
Well I've got another one ripening and I told my neighbor lady that I'll give it to her..she eats them raw...and to let me know if it's any different..lol
