1 lb boneless skinless chicken breasts
1 T your favorite barbecue rub
6 slices bacon, chopped and fried crisp
shredded Monterey jack cheese blend (or your favorite)
favorite bbq sauce or dressing for dipping chicken
Sprinkle chicken breasts with rub, ensuring they are well covered. Refrigerate several hours.
Preheat grill over medium heat.
Grill chicken til cooked through. Top with cheese and melt.
Serve chicken breast topped with bacon and your favorite side. I sauteed fresh zucchini and green beans from the garden in a little olive oil along with fresh minced garlic and a splash of white wine.
