Last time I ate dinner at my friend Sharon's she served a salad which I absolutely loved. It had broken up uncooked Ramen noodles in it, slivered almonds and some sort of tangy dressing. I would like to make it within the next couple of days for my daughter. My friend's in New Mexico for the next two weeks and her cell is on "roaming" so I really don't want to call her for a recipe. I've looked on the web, but none of the Ramen salads I've found seem to be the right one.
Does anyone out there know the recipe for this excellent and unique side dish?

Crunchy Cabbage Slaw
Ingredients:
1 (3-ounce) package ramen noodle soup mix (I think she used chicken)
1/4 cup sliced almonds
1/3 cup canola oil*
1/4 cup cider vinegar
2 1/2 tablespoons sugar
1 small green cabbage, shredded
1 small carrot, grated
3 green onions, sliced
Preparation
Remove flavor packet from soup mix, and reserve. Break ramen noodles into pieces, and place on a lightly greased baking sheet. Add sliced almonds.
Bake at 350°, stirring occasionally, 5 to 10 minutes or until toasted. Set aside.
Whisk together reserved flavor packet, oil, vinegar, and sugar in a bowl until blended. Chill 1 hour.
Toss together cabbage, carrot, onions, and dressing in a large bowl. Place noodles around outside edge of cabbage mixture, and top with almonds.
* 1/3 cup vegetable oil may be substituted for canola oil.
Yield
Makes 7 1/2 cups

Romaine lettuce
Toasted walnuts and Ramen noodles uncooked - I toast mine in a frying pan - no oil
Dried cranberries.
Dressing -
I/4 cup oil
1/2 cup balsamic vinegar
1/8 cup Soy Sauce
1/4 cup sugar
(You can adjust these ingredients to suit your tastes)

any store bought vinegarette will work in a quick pinch for when your feeling lazy, just let sit for a few hours or overnight to hydrate the noodles.
Chinese Chicken Salad
4 cups cooked cubed chicken breast
1/3 cup slivered almonds
1/3 cup chopped green onion
1 red or green bell pepers cut into rings
lettuce ans of young spinach leaves
1 pakg. ramen noodles chicken flavor broken or crunched
THE DRESING:
3 tablespoons rice vinegar
2 tablespoons soy sauce
ramen seasoning pack,
1/3 cup salad oil
1 tablespoon peanut butter
dash of red pepper
Whisk dressing and set aside
Combine chicken, almonds, onions, and peppers. Toss with dressing and broken ramens.
Serve over chilled lettuce lined plates. makes 4 servings...
