1/2 cup butter, softened
1 cup sugar, plus additional for sprinkling
2 eggs
1 t vanilla
2 cups flour
2 t baking powder
1/2 teaspoon salt
1/4 cup sour cream
splash of milk
1-2 cups fresh blueberries
Preheat oven to 375°. Spray a 6 muffin pan generously with cooking spray. Set aside.
In a large bowl, cream butter and 1 cup sugar til light and fluffy. Add eggs one by one, mixing well after each addition. Stir in vanilla.
In a separate medium bowl, whisk together flour, baking powder and salt. Add flour mixture to butter mixture, alternating with sour cream. Add a splash of milk if batter is too thick. Fold in blueberries.

Fill muffin cups and sprinkle each evenly with additional sugar.
Bake 27-30 minutes, or til a toothpick inserted in muffins comes out clean. Cool in pan 20 minutes before removing to a rack.
Excellent muffins!

Hey, I have everything but the blueberries for this recipe. Got any ideas of what else I could use? I do have orange peel, nutmeg, cinnamon, eTc.
