Where we live in Texas, we have a ton of mint growing on the entire side of our house, that started from two little plants that a friend gave us a number of years ago. I just hate to just let it all go to waste, so besides using it in some dinner recipes and salads, I've also learned to make a couple of drinks that I really love, one of which is the currently popular "Mojito".
There are a variety of ways you can make this refreshing, flavorful drink, and my current favorite is to make it with Midori Melon liquor, which really adds to the summertime "mood" of the drink. Now, I know that a traditional mojito is made with light rum, but creating a new twist on something is an art ~ and I take "artistic license" with my recipes! I made one tonight, in fact, and took a picture of it so you can see what it looked like right before I drank it all down! Yummy!

Midori Mojito
Ingredients:
12 fresh, crushed mint leaves (use mortal and pestle if you have one to crush leaves, releasing the fragrance; otherwise you can crush the leaves with a spoon inside of a stainless steel bowl)
1 shot Midori Melon Liquor
3 shots Club Soda
1/2 shot of lime juice (I use Rose's Sweetened Lime Juice)*
1/2 shot of simple bar syrup*
Ice cubes
*if you want a drink that is not as sweet, substitute regular lime juice for the sweetened lime juice, and just eliminate the simple bar syrup, and add an extra shot of club soda instead
Directions:
Crush mint leaves with a little of the simple bar syrup (or a little water) to release flavor and capture it into the syrup; place crushed leaves into the bottom of cocktail glass. Add ice cubes on top of mint, filling glass to the top.
Add Midori Liquor, club soda, and lime juice, and stir gently. Garnish with sprig of mint.
The combination of the melon liquor, the mint, and the lime all work together, "synergistically", as it were, to create a mouth-watering, thirst-quenching drink that I guarrantee you'll love!
Voila! That's all there is to it!
