
I've written about mangoes before (check the links below), but here it is....mango season is upon us again and I'm surrounded by the lovely aroma of ripe mangoes.
Anyone who knows anything about me knows I LOVE mangoes with a passion... in any way shape or form. Fresh and raw just off the tree, in recipes and any other way I can get them. When I read recipes or ideas using peaches or apricots, my mind inmediately converts it to use with mangoes instead....!
While in Miami, I visited with a dear friend who gave me a big bag of mangoes. Raul Musibay is one of the Three Guys from Miami, of which I have written before and even did an article about Raul's fabulous pig roast. Raul has a lovely little mango tree in his backyard and when he learned I was visiting Miami, he let me know there was a bag with my name on it.
You can't appreciate the size from the photo, but these mangoes were huge and quite fragrant. The first two mangoes that were ready, I peeled and cut up and we ate fresh with some ice cream. As more mangoes ripened, I was peeling them to eat fresh, but the left overs from the previous batches I cooked so they would not spoil.

To cook them, I just placed them in a saucepan with a bit of sugar (to your own taste). The sugar is mainly to give the cooked mango a slight gloss. These were so sweet I barely had to add any. Cook until the natural juices evaporate but don't let it get too dry.

I added some Canton Ginger Liqueur my sister had on hand at the last minute of cooking so the alcohol would not evaporate. The bottle she has is still from the original formula or recipe and it came in this cute little bottle. The zippy ginger liqueur pairs very well with the cooked mango compote as would some.
For a simple but delicious treat, just spoon some ginger liqueur infused mango compote over French Vanilla ice cream or homemade vanilla ice cream as we did. It is also wonderful served over nice, big, fluffy Belgian waffles with freshly made whipped cream...... YUM!

I used to make a simple sauce with mangoes and orange juice (cooked) to pour over lightly battered and fried chicken breasts. It was always my son's favorite meal.
We also used to serve them as dessert when we had company. We scored them in the skin, turned the skin inside-out so that the cubes stuck out all over. Then we poured a bit of Galliano over them. Sometimes we served the separated cubes and Galliano over ice cream.
Your recipe sounds wonderful. If I ever have company again, I will have to try it. Thanks for igniting some good memories of my years in Oz.

You're right about Hawaii mangoes....but the ones I got from my sister's yard and from our friends were also good....maybe a mango just needs to be from people you care about and not from just any farm....LOL
While growing up in Ft Lauderdale I would climb up and pick them heaven [but then I knew not of the stains of mango juice`that came with my kids`]
I got the job of peeling them all as my mom was allergic to the peel, but could eat them all day long! I buy them in the health food stores here but nothing is as good as a freshly picked mango!!

It is best to buy a tree that has been propagated by grafting.
I hope to not dash your dreams but if you get frost in Kissimmee, I doubt a mango will do well there. You need to check with your Agricultural County Agent.
Bob, mango juice stains so make sure the water nymphs are wearing bathing suits or old clothing!

I am now allergic to mangos. Sigh...
Are you allergic to the whole thing or just touching them?....My sister can't touch them but she can eat them if someone else peels them and cuts them for her and as long as the mango doesn't touch her skin or lips....
Although I do eat and like blueberries, I can live w/o them, but beets, cherries and mangoes are up there in the top 10 favorites....
Too bad!
