Chimichurri Marinade/Sauce
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup water
1 small bunch cilantro, chopped
1 small onion, finely chopped
4 cloves garlic, minced
1 t Mexican oregano, rubbed
salt and pepper to taste
2 pounds firm tofu, cut into 1/2 inch cubes
Whisk together ingredients from olive oil through salt and pepper. Taste and adjust as desired. Pour 1/2 of mixture into a large ziploc bag. Reserve remaining chimichurri and puree till smooth. Add to a covered container and set aside. Add cubed tofu to bag. Marinate overnight, turning bag occasionally.
Briefly drain tofu (keep the drained marinade and puree it too - it is perfectly safe to eat as there was no raw meat in it...). Shake the tofu cubes with a little corn starch or flour in a bag, fry in a little olive oil till brown and crispy. Serve with grilled potatoes, reserved sauce and additional cilantro. Or you could serve this over brown rice or whole meal spaghetti... Add some tomato slices for color...

I can't get myself to eat Tofu, I tried it once and it tasted like a mushroom that someone forgot to season. I haven't wanted to try it since and I don't even really know what it is.
Your recipe sounds tasty - I might give tofu one more shot.
I am always trying out stuff to do with both that will make them edible to non-vegans, since I want to create meals we can all enjoy together. Years and years ago I decided I wanted no "can I eat this or not" at my table... If someone chooses not to eat something for reasons of not liking it, that's different, although even there I try to avoid it: these are not everyday meals, they are for when the family gets together, and the harmony that comes from sharing food is a lovely basis for more harmony on other levels...
Anyway, that's why I am always on the lookout for spicy stuff that would jazz up Soy in any way, shape or form. And Shannon does some awesome things with food - which is why I happily follow her lead on some of her seasoning ideas!
But my cousins kids are alergic to dairy,eggs,whey so it is interesting to read about different recipes I can share whith her..
