This is a vegan version of the Flowery Pancakes...
Pick Elderberry flowers and cut off as much of the stems as possible.
Mix soy milk and a little oil very well.Add flour and a generous amount of baking powder, stir till moistened.
Now add the flowers and...
fold in carefully.
Fry gently in a skillet with a little oil, turn when nicely browned on the bottom.

Enhance the flower taste with a little Elderberry Flower Jelly!

Have some! The elderberries are in full bloom here in Sweden - we can make lots!
If you do not want to eat/cook vegan, feel free to use milk and add an egg or two. That will make the batter a lot like regular pancake batter...
