I used my homemade steak seasoning, which is simply garlic powder, black pepper and salt.
buttermilk
hot sauce, divided
steak seasoning
catfish nuggets
2 eggs
1 T water
1 cup flour
1/2 T baking powder
pinch salt
oil for frying
In a large bowl, mix buttermilk, hot sauce and seasoning to taste. Add nuggets and marinate 1 hour.
In a flat but deep container, mix eggs and water.
In a separate container, mix flour, baking powder and salt.
Heat oil in a large cast iron skillet over medium high heat.
Dredge fish in egg mixture. Let excess drip off. Dredge in flour mixture. Tap off excess and fry fish til golden brown.
Drain on paper towel.

I missed greens so much with this meal I almost went over and picked some dandelion greens from the neighbor's yard and cooked those up.

You could use this with ANY kind of fish that you fry.
