Let me invite you to a very simple lunch:
Crepes with lingonsylt (cranberries)...
Start with a simple crepe batter: eggs, milk or water, flour.Beat well, let rest 1/2 and hour.
Fry in a little oil, turn when bottom is nicely browned. Place a slice of cheese on the turned crepe - it will melt while the other side cooks.

When done, roll up and serve with cranberry sauce, which is called Lingonsylt in Sweden!

Your photos looks great Cristina, but I will admit that I have never tried it with cheese. Have you ever crepes/pandekager with icecream?

Katrina, I don't know what Americans call lingonberries - in Sweden they are cranberries.
