Easy Baked Pork Chops with Chunky Apple Compote
Pork Chops
4-6 pork chops, boneless (about ½" thick)
1 pkg. dry onion soup mix
Preheat oven to 350 degrees. Pour dry soup mix into a shallow bowl. Pat both sides of each pork chop with dry soup mix and place in a 9 x13-inch baking dish. Bake until no longer pink in center, about 20 minutes (thicker pork chops require long baking time). Do not over bake. Remove from oven, turn each chop over and let sit two minutes.
Chunky Apple Compote
3 apples, peeled, cored and chopped
1/2 cup apple cider or apple juice
2 tablespoons brown sugar
1/4 teaspoon cinnamon
pinch of cloves
pinch of nutmeg
pinch of salt
Preheat oven to 350. Pour dry soup mix into a shallow bowl. Pat both sides of each pork chop with dry soup mix and place in a 9 x 13-inch baking dish. Bake until no longer pink in center, about 15 to 20 minutes. Do not over bake. Remove from oven, turn each chop over and let sit 2 minutes.
For Chunky Apple Compote, place all ingredients in a medium saucepan over medium-high heat. Bring to a boil. Reduce heat and simmer 15 to 20 minutes until apples are tender and liquid is absorbed. Serve over hot pork chops.
