BAKE..
well in guys parlance.. "screw 'em".
For the last couple weeks I have been making flatbread.... not intentionally you understand.. but the dawg doesn't seem to care.
I had the NEWW YAKKKE THIGHS recipe for making a 'no knead' bread... and frankly it just sucked.. [guy
[parlance sliiping back].
What I have been after was hot fresh bread from flour, yeast, and salt with a minimum of bother..
to that end I'd bought a huge rubbermaid cake box to contain the mess, and had been making the sloppy dough NEWW YAKKE version wilh little success..
Tonight I just said the hell with it and grabbed a handful and workded it for about thirty seconds and got this..

Cut the dough ball in half and baked it just under an hour in the coutertop oven above..
Too much bread at once otherwise.. made a small loaf deliberately.
My neighbor across the street and I tried it, she pronounced it 'fit for any resturant table in town. '.
About damn time!

you can do it.. now... I have cooked for a living a few times so I'm not scared.. (and know how to get cornbread out of the skillet...), but it is pretty easy..
my problem before was I had dead yeast..
this was three coffee cups of flour, about one and a half coffee cups of water with the yeast in it, enough salt to fill the tightly cupped palm of my hand and five minutes.
whaddya got to lose but 34 cents worth of ingredients... hell thats one reason I hav a dawg!

last place I cooked for a living was a Cinema Pub that was in the theatre that I watched Roy Rogers movies in, thrity years before!
:)
With the economy the way it is, gotta make good moves in lifestyle changes.
Also, I like becoming more self-sufficient, where possable.

I made the New York Times recipe, the crust was like a rock. I need something that doesn't take a lot of kneading because of the arthritis, I ll keep hunting.
In the meantime Doc, enjoy.
the little kneading I did here was LESS trouble than cleaning the bloody machine.
1 cup butter (softened)
1/2 cup honey
1 1/2 teasp. ground cinnamon
Mix together until smooth and well blended. Cover and refrigerate.
Keeps 2 weeks in fridge or 3 months in freezer.
My mom raised 6 boys and 1 girl on home made bread and I still love to eat it when I visit my parents. We'd go through a loaf per meal with that crew. When we got older, she had us all taking turns at least once a week in the kitchen learning how to make it ourselves. When we left home, we bought bread makers. It's not the knowledge but the time that keeps me from doing it any more.

Homemade bread is the best !!!
specially right out of the oven and you slap some REAL butter on it wow fit for a King or Queen lol
