4 cups frozen hash browns, thawed
2 T vegetable oil
1 lb ground beef
1/2 chopped onion
1 cup tomato juice
1 t each: chili powder, garlic powder
pinch each: cumin, cayenne
salt and pepper to taste
1 cup shredded Co-Jack cheese, divided
Preheat oven to 425°.
Combine thawed potatoes and oil in a large bowl. Press to cover pie plate. Bake 15-20 minutes or til golden brown and crispy.
Reduce oven temp to 350°.
Meanwhile on medium heat, brown beef. Drain well. Stir in onion and cook for about 5 more minutes. Add tomato juice and seasonings. Simmer 10 minutes. Remove from heat and stir in half of cheese. Pour meat mixture into potato crust. Sprinkle remaining cheese over the top.
Bake at 350 for 30-35 minutes or til cheese is bubbling. Let rest a few minutes; slice and serve.

Advice for good hash browns? Leave them alone while frying. If you stir them too much they fall apart and get soft, losing the crispy effect you want ;)
