
I have been learning about baking for the group I created called Baking 101: Learning to Decorate and Bake Cakes, Breads, and Other Goodies in 2008. I decided today to make an old favorite, though, and share the recipe with all my Gather friends. I learned a version of this through a Pampered Chef party years ago, and it is my favorite (and my niece, Hallie's) way to have brownies. It is simply delicious and you will agree you have delved into Cherry Bliss with just one bite.
You begin by making 2 boxes of brownies according to package directions. Spread the batter in the stoneware bar pan and bake for 25 minutes at 350 degrees. While that bakes, mix together 12 ounces of softened cream cheese, 3 tablespoons of marischino cherry juice, and 1 10 ounce jar of marischino cherries, drained and chopped. Now, you have 2 options - make your own whipped cream (fold in after whipping -- way better! See instructions below*) or fold in 1 large tub of non-dairy whipped topping. Allow the mixture to chill while the brownies chill completely, then spread it all over the top of the brownies. Serve with addtional cherries and a dollop of whipped cream if desired. 
* whip 1 pint heavy whipping cream with 1/3 cup sugar or splenda until fluffy. It is not hard - give it a try!
