Today I wanted something nice and spicy, and so I tried out something.
I added lots of garlic to some crumbled tofu along with spices, and served the result with Farfalle.
When I do something like that, I don't make enough for a crowd - just for yours truly... to test it! But I will happily share it with you!
I started with firm tofu and crumbled it into a bowl.

Then I sliced two tiny onions and pressed lots of garlic...

and added them to the tofu.

Now a little vinegar (I have some cranberry vinegar I got at IKEA!)

and a drizzle of pumpkin seed oil (looks brown but is really green).

Mix it all up, together with some instant vegetable broth and/or your favorite herb salt and pepper.
Let it all marinate for at least half an hour.

Then fry gently in a non -stick pan until the onoin is soft and it is starting to brown a little in places.
Cook farfalle till JUST al dente - you don't want them mushy! When drained, add tomato cubes and salt; continue cooking for another minute or two.
Fold pasta mixture and tofu mixture together.
Here is some for you - it is delicious! And it will get served to a crowd soon - that's for sure!
