I'm the cook, he's the dishwasher. Even when it comes to cooking over an open flame. It has been that way for several decades.
Because we both like food grilled outside, I use the grill year-round. Blowing-sideways rain or sub-freezing temperatures are about the only weather conditions that drive me indoors.
I like to use smoke with salmon (plank it!), some steaks and barbecued chicken or ribs. Because I work full-time outside the home, I can't fuss with soaking wood chips. There's a quick, easy alternative. These wood pellets don't need to be soaked, and after ten minutes over the flame, they're ready to smoke. For years, evey fall, I have been going to the local one-stop grocery/variety store and stocking up when they are on sale. They come out of Arkansas, so I suspect they are available in most places. They have a website, too.

I have a tree watching over me...this it about 5:30 pm and look at that beautiful sun out there!
Just put a hand full on aluminum foil, fold into a pouch, punch a pencil-sized hole in top...and put on the grill while it pre-heats. In ten minutes, you'll be smokin'!

Tonight I am grilling Smoked BBQ Chicken breasts--boneless. Here's everything I need. I really like silicone, can you tell? I have red silicone tongs for flipping the raw chicken; then, I use the green silicone tongs for taking it off the grill and serving it. (I am compulsive, aren't I?) I have a red/black silicone basting brush--I love how it comes clean in the dishwasher! (Compulsive? I'm compulsive?) I heat the barbecue platter on the grill. I just love how it sizzles. I noticed I had more eyes supervising my cooking, so I did move her into the picture. She holds the dry-erase pens for our busy calendar!

While I was getting out my ingredients, the smoker pouch has been heating up...YUP, it's ready!

After 9 minutes, the chicken breasts are ready to turn...and cover with BBQ sauce. Notice you can see the "smoked" ends of the chicken?

After you flip the chicken and slather it with BBQ sauce, enjoy the outdoors. Doesn't this beat being inside the kitchen?

You might even find some more eyes watching you cook!
