Commercial fishermen from Wisconsin Live Fish were netting Buffalo carp on the Rock River in Monterey Bay yesterday. I stopped to watch for a while, even though it was a cold blustery day. I don't know how those guys could stand being in the water that still has ice on the surface in many places!
The crew uses a net that is 3000 feet long to capture the fish. After being weighed the fish will be put into live wells and shipped live by truck to the fresh fish markets in New York City. They are often sold as Rock River salmon. Stoller Fisheries in Iowa also uses about 6 million pounds of carp in a variety of products.

I think you can call it just about anything you want, except for an actually species per se. I read once that many fish people probably wouldn't buy as easily because of name, they call "white fish" instead, including shark meat. Because they put "Rock River" in front of it, they can say Salmon most likely.
Thanks.
