This dessert recipe, from TOH Light, doesn't sound too bad. I really love lemon!
And I never knew you could whip evaporated milk like whipping cream. Learn something new every day, I guess.
Of course, I would serve this with whipped cream, Cool Whip has been banned from my home. I would rather have the extra fat and calories, than the cheap (read: unhealthy) ingredients in whipped topping. I try not to buy anything with saturated fat and/or high fructose corn syrup.

I love Key Lime Pie too, and have tried to make it a couple of times myself from a book I have, and it tastes fine/OK... just comes out semi-soupy like, ha ha. You wouldn't have a fool proof recipe for that to recommend would you?
