A chef on a local TV program demonstrated this recipe. Thought it sounded delicious!
Puerto Rican Style Red Bean Stew with Rice
INGREDIENTS:
1 Lite Polska Kielbasa, cut into bite size pieces
2 Tbsp. olive oil
1 medium onion, diced small
2 garlic cloves, peeled and chopped
2 tsp. chili powder
2 tablespoons Goya Sofrito - Tomato Base (available at larger grocery stores)
2 large potatoes, peeled and cut into bite size pieces
2 packets Sazon Con Azafran - Seasoning (available at larger grocery stores)
3 cans pink pinto beans, or small red beans or even black beans
1 jar of green olives - rinsed
DIRECTIONS:
Start boiling potatoes on high heat.
Saute meat in 2 teaspoons olive oil over high heat.
Add onions and garlic and continue to sauté until onions and garlic are soft. Add chili powder.
Add the Sofrito to the meat mixture and stir until well mixed.
Add olives to meat mixture and simmer until warmed.
Once potatoes start to get soft, add Seasoning packets - water turns orange.
Add some of the potato water to the meat mixture and stir until blended.
Last, add everything to the potatoes and mix well.
Serve over rice.

This sounds very good though.
I am going to make a sofrito from scratch, use pork chops instead of sausage and use my homemade adobo. We shall see how it turns out!
