This cook wasn't stumped! Sue S. (http://ss4000.gather.com/), using the five required ingredients:
prepared gnocchi
portobello caps, wiped clean
hazelnuts
fresh beets
cottage cheese
came up with this awesome vegetarian meal. You also get to use water, salt and pepper, oil and up to three other ingredients. Sue's extras were baby greens, balsamic vinegar and heavy cream.
Cook the gnocchi as directed. Quarter the mushroom caps and saute in oil. Puree the cottage cheese. Deglaze the mushroom pan with heavy cream, thicken with cheese puree, add salt and pepper and stir in gnocchi with the mushrooms.
Julienne the beets, serve over baby greens. Make a vinaigrette with balsamic, oil, salt and pepper. Dress the salad and top with toasted hazelnuts.
