I got this recipe from my friend Stan. He swears by these potatoes. They'd be a good side dish for Easter dinner.
"AU GRATIN" POTATOES
2# frozen hash brown potatoes, thawed
1/4 cup butter
1 medium onion chopped
1 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 cups cream
2 cups shredded sharp cheddar cheese
1/4 cup fine bread crumbs
paprika
Saute onions in butter. Stir in flour, salt and pepper. Cook until bubbly. Remove from heat. Stir in cream and 1-1/2 cups cheddar cheese. Return to heat until bubbly for 1 minute. Butter 1-1/2 quart casserole. Place potatoes in dish. Pour sauce over and top with the rest of the cheese and the bread crumbs. Sprinkle top with paprika. Bake approximately 20 minutes at 375 degrees, or until bubbly hot.
