This sounds wonderful. I'm may try to make this for tomorrow's dinner (depending upon when George Mason is playing in the playoffs). My son-in-law loves Mexican food so I hope they'll all be here at dinner time (son, daughter, son-in-law and two of their friends!). This just might feed them all!

We've made this or something very similar. My husband and I loved it but the kids wouldn't eat it. Sometimes having kids sucks.

I love sour cream enchiladas but I think I'd use corn tortillas instead of the flour. There's just something about a corn tortilla that I prefer over flour for most everything.

I've never tried making enchiladas at home. We did make whole wheat enchiladas at work one day but they had beef in them and no sour cream.

I agree that sour cream makes everything better. Love enchiladas and sour cream. I also prefer homemade salsa but there are a few salsas that are sold at hot sauce shops that are pretty darned good. I wouldn't buy any from the supermarket. If I do, I use them to cook with, not to serve with chips.
