This is a favorite recipe of mine. Nice to serve with Easter dinner or brunch.
MARINATED ASPARAGUS
2 lbs. fresh asparagus, woody ends removed
1/2 cup olive oil
1/4 cup vinegar
1/4 cup lemon juice
1/4 cup green onions, chopped
2 Tbsp fresh parsley, chopped
1 medium tomato, chopped
1/2 tsp sugar
1/2 tsp dry mustard
1/4 tsp salt
1/8 tsp pepper
Steam asparagus until crisply tender. Mix remaining ingredients together in a bowl. Place asparagus in water-tight container and pour marinade over all. Refrigerate at least four hours before serving.
