I know, I know. Most of you are in a part of the country where it's so cold you don't even want to think about eating a popsicle, but maybe you could save the recipe for those super hot summer days.
Frozen Fruit Bars
2 cups cut up summer fruit (strawberries, peaces, watermelon, etc..)
1 TBSP Sugar
1 TSPN Fresh Lemon Juice
Place fruit in blender and mix until smooth. Add 1-2 tsps of water as necessary. Add sugar and lemon, cover and mix well.
Pour into 4 oz ice-pop trays or paper cups. Insert sticks and freeze.
Carbs 9 grams
Fat 0.3 grams
Protein 0.5 grams
This is just easy and conveinent. Many times when I have fruit in the house I always have something left over. Instead of letting it rot and throwing it away, this is what I do.
