I made the most wonderful meatloaf the other night and my daughter and I though it also made the best meatloaf sandwiches. My MIL often puts mustard and cheese in the middle of hers and we like them that way too so I decided to try and make one healthier and with a kick. I didn't measure but here is pretty much what I did with approximate amounts. If your kids like meat loaf this would be a great way to sneak in some veggies.
1 pound lean ground turkey
1/4- 1/2 cup oatmeal (mix till it feels right)
1/4 cup catsup
1 egg
1 large chipotle in adobo (minced) with a couple teaspoons of the sauce (more or less, depending on your tollerance for heat)
2 slices 2% Swiss cheese
1 to 2 Tablespoons Dijon mustard
2 Tablespoons minced onion
1/4 cup chopped celery
1arge carrot shredded
salt and pepper to taste
Mix all except the Swiss and the Dijon and pat 1/2 into a loaf pan. Top with the two pieces of cheese to cover the meat and spread on the Dijon. Top with the other half of the meat mixture and bake at 375 for one hour or until browned and completly done. Let cool a few minutes before slicing. Great cold on meat loaf sandwiches.

This sounds great and it just happens that I was trying to think of something different to do with some ground turkey for this week. I will try this on the husband and son who are still at home. And the two grown one's that are always here eating leftover's but live in there own homes.
Recipe sounds good, though.
so will give this a try.

Johanthan, I've often put salsa instead of catsup in my meatloaf and may try that if this recipe next time I make it.
