Thanks, Elaine.
Make hummus by placing the garbanzo beans into the food processor with the tahini, blend until smooth and drizzle in the oil (olive oil) until a spreadable consistancy. Cut the corn tortillas into triangles and slow bake in the oven until crisp, serve with hummus.
Menu: Smoked Salmon Rolls with Horseradish Tahini and fresh Canteloupe
In a blender, combine walnuts, tahini, horseradish, a dash of salt and pepper, a drizzle of oil and just enough water (teaspoon or so) to thin the mix. Blend well.
Spread each tortilla with the horseradish tahini, layer with spinach leaves and salmon, roll lightly and secure on a cookie sheet seam side down. Pop in the oven for approximately 3-4 minutes at 350 degrees.
Cut the canteloupe into bite sized pieces. Serve with yogurt on the side.
Oh, these ALL sound so good!
Salt, and dry smoked salmon slightly in a warm oven. Toast cantalope seeds in a hot dry pan. Cut Cantalope into tubes with apple corer. Soak in Vodka (1) for several minutes. Brush cantalope with Lemon Olive Oil. Wrap salmon around cantelope. Garnish with cracked black pepper. Serve chilled.
Combine Horseradish, Lemon Olive Oil, Cracked Black Pepper, Salt, and Toasted Cantalope seeds in blender. Serve with Cantalope Rolls, above.
Bake corn tortillas until crispy. Crush with rolling pin to chunky breadcrumb size. Slice Eggplant (2) into thin strips. Thin Tahini with water and a bit of the Lemon Olive Oil, brush on Eggplant (2). Coat with corn tortilla crumbs. Deep Fry. Serve Warm.
Finely chop Tomatoes (3). Reserve juices. Toss with Tahini, Cracked Black Pepper, Lemon Olive Oil, and reserved juice. Serve with Crispy Eggplant, above.
Combine Tomatoes (3), Cantalope, Horseradish, and Vodka (1) in blender. Serve chilled.
extras: cream cheese, chickpeas, strawberries
Mix fruits for a fruit salad.
Mix cream cheese and horseradish with flaked salmon.
Mix cream cheese, chickpeas and tahini. Fry or bake tortilla strips. Serve with dips.
I have a few on here that I really like, Marianne. And I don't even like smoked salmon.
It's sad that I wouldnt' eat anything I created today. LOL
I don't care for smoked salmon OR canteloupe, but the rest of you would eat well. :)
So if I was going to make a meal with these 5 this is how it would go -
Mix some horseradish into the tahini. Smear it on the tortillas, top with the salmon, roll up. Heat it a bit. Serve with chunks of cantaloupe.
Easy enough, Risa!
