Dry stuff:
2 1/4 C flour
4 tsp baking powder
3/4 tsp salt
1/4 tsp cinnamon, ground
Wet stuff:
1 1/2 tbsp white sugar
1 tbsp dark brown sugar
3 eggs
2 1/4 C milk
1/2 C melted real butter
1/4 C olive oil
1/2 tsp vanilla
1/8 tsp imitation maple flavoring
Mix dry stuff (all) in one container. Mix wet stuff (all) in another container. Pour wet stuff into container of dry stuff and mix well. Batter will be a little bit lumpy. (Very small lumps).
Heat skillet for a few moments before adding batter. My burner goes (between low and hi) from 1 to 9, and I set it just a hair below 4 and fry in an iron skillet. Fry slowly, like french toast. Turn when cake bubbles.
Take care when using syrup... these won't require as much!
