The bread would be delish baked with the pesto and artichoke hearts on top.
extras: fresh tomatoes, fresh mozzarella, heavy cream
Saute catfish fillet in olive oil and pepper. Top with pesto, cover and cook through.
Meanwhile, slice tomato. Brush french bread with olive oil and salt and pepper. Layer with tomato, artichokes and top with mozzarella slices. Broil til cheese is melted and golden.
Simmer prunes and cream. Serve as dessert.
though getting me to eat catfish...another story....
but I will try
poach catfish and flake the meat
make a stew with chopped artichokes and flaked catfish meat seasoned with basil pesto in cream and seasonings
soak prunes and juice with brandy and simmer over low heat to warm
make french toast with bread, egg and cream
and serve under drunken prunes
( drink lots of brandy to forget I am eating catfish!)

Extra ingredients:
pecans, lemon juice, romaine lettuce
Bake the artichoke, drizzled lightly with oil and lemon juice, until done. When cool, remove meat from leaves and place in blender. Mix well and add to pesto sauce, blend well.
Broil the catfish, toast the bread. Slather the bread with the artichoke/basil pesto sauce, put the fish on the bread and slice into 6 inch sandwiches.
Cook the prunes in water on the stove top just until the water evaporates. When the prunes cool, slice off the stones. Toss with the nuts, a drizzle of lemon juice, a drizzle of olive oil and salt. Serve over a bed of romaine lettuce leaves.

Trim the artichokes; boil in acidulated water and serve with lemon butter.
Cook the catfish in a little water to which you have added a thinly sliced lemon and several whole black peppercorns. Serve topped with the pesto and accompanied by buttered French bread.
Put the prunes in a saucepan and pour in sherry to cover. Add zest of 1 lemon and 2 whole black peppercorns. Simmer an hour or until completely rehydrated and falling-apart tender. Remove to a bowl. Boil remaining liquid until thick and syrupy. Strain over prunes and serve.
