Do you bake more in winter than in summer. If you are a typical cook, you do. Because it just gets too hot in the kitchen in summer. Do you just think of making your own mixes at Christmas? Many people make more mixes at Christmas because they give them as gifts. Why not save some money and make your own mixes. I have done this for years. I have posted many of these mix recipes in the past. However, I thought you may enjoy some new ones. Make your own mixes, save money, save time and keep your family happy at the same time. Isn't that what we all want?
If you still insist, you can give them as gifts. :)
I don't know anyone who does not like Scones. Homemade scones are simply the best. This recipe is so easy to make. It is great to keep some of the mix on hand for those times you want some quick Scones. Never purchase Commercial Scone Mixes again. Remember to add the directions to the packages of mixes. Enjoy
FRIENDSHIP SCONE MIX
1-3/4 cups flour
1 TBSP baking powder
1/2 tsp. salt
1 cup quick-cooking oats, uncooked
1/2 cup chopped walnuts
1/3 cup mini semi-sweet chocolate chips
Combine first 3 ingredients together in a large mixing bowl; stir in remaining ingredients. Mix well. Store in container in a cool, dry place. Attach instructions. Makes 3-1/2 cups mix.
INSTRUCTIONS:
Place scone mixture in a large mixing bowl; cut in 1/2 cup butter until mixture resembles coarse crumbs. In small bowl whisk together 1/4 cup milk with one egg; add to crumb mixture until just moistened. Knead gently on a lightly floured board 8-10 times; pat dough into an 8-inch circle. Cut into 8 wedges; place on a lightly greased baking sheet. Bake at 350 until golden, about 10-12 minutes. Serve warm.
