You could give her a gift certificate to go get a massage or pedicure or something. While she's gone you can make her dinner and surprise her with a candle lit dinner/flowers on the table and romantic music that you both like.

Make it from the heart. Depends on the money situation, Jewelry, Mixed flowers(you can get a bunch more of these than roses and they last longer), any bath and body works smelly stuff. Tie any of the above with a great card and you can't go wrong. Spend some time looking for the card or make it yourself. Either way write something with meaning in the card.
