IN A HEAVY SKILLET PLACE
2 tablespoons extra virgin olive oil. I like Bertolli and Spectrum, but there are quite a few good olive oils on the market.
HEAT OIL AND ADD
1 pound of beef tenderloin slices 1/2 inch thick (you may use carefully trimmed and sliced top sirloin) Another alternative would be to use chicken cutlets.
Keep oil moderately hot and sear the medallions briefly on each side.
LOWER THE HEAT
ADD
2 tablespoons butter
8 ounces sliced fresh mushrooms
1 clove minced fresh garlic
1 thinly sliced shallot
SAUTE AND STIR UNTIL
Mushrooms are barely browned and are releasing their liquid. Do not allow garlic to brown as it will leave a bitter taste in the recipe.
ADD
4 ounces Dry Marsala wine and simmer 2-3 minutes
SERVE
over pasta of choice. I recommend thin spaghetti, but you may use another pasta shape if you prefer. Garnish with a little chopped parsley or fresh herbs. Serve with a salad (perhaps Scampi Artichoke Salad) a side of Garlic Spinach and Great Garlic Bread for an elegant meal to remember. I will post the other recipes.

This recipe is easier and almost bullet proof..... and less costly.... but still elegant and sumptuous.

I was raised in the South on good home cooking.... great food, but not a lot of international cuisine. Italian food was Franco-American out of a can and going out for spaghetti.... meant it had chilli poured over it....lol... When I found a recipe for Italian red sauce in a cook book, I had to go 50 miles to find a store where I could buy the oregano and basil and garlic.... it just was not carried at the local markets... of course, this was before the onslaught of frozen dinners.... You could get Swanson turkey and dressing or salsbury steak... no international cuisine...
Today we have a vast variety of exotic ingredients at our finger tips... we just have to figure out how to cook with them.
This dish brings a great traditional Italian flavor profile to the family table, painlessly...
