Seven Layer Salad
The good thing about Seven Layer Salad is you can substitute and make it your own. I don't think I've ever found anyone who ever made it exactly the same. This is my favorite aunt's (and my favorite) version. I have made suggestions for substitutions for some ingredients.
1 head lettuce, broken into bite-sized pieces
1 bunch scallions, sliced
2 cans sliced water chestnuts
(NOTE: If you don't like water chestnuts you could use green, red or yellow bell peppers cut into bite sized pieces, or cucumbers)
1 cup celery, sliced (I substitute shredded carrots because DH doesn't like celery)
1 10 ounce package frozen green peas, uncooked, drained well
1 cup mayo (or if you prefer ((UGH)) Miracle Whip)
1 package shredded cheddar cheese
2 lbs bacon, fried, drained well, chopped into bits.
In a large bowl (looks best in a trifle bowl) layer as follows:
Lettuce, celery, water chestnuts, scallions, peas. Top with the mayo, spread to cover over the layer of peas. Sprinkle the mayo with the cheese and then the bacon bits. DO NOT TOSS.
Refrigerate until ready to serve.

It's very yummy if you like salads.
Heck, you could even make a healthy yogurt-type dressing for it to reduce some of the calories.
