Good one, Lynn!
First, I would make a custard of the milk and eggs, then add in most of the Parmesan... (actually if I were making this for myself I would also sneak in a bit of fresh-ground nutmeg, but you could make it without...) Spread a bit of the custard on the bottom of a greased lasagna pan, then layer as with lasagna... noodles, broccoli, turkey, a few cranberries (very sparingly) and then the (sliced or shredded) swiss cheese followed by a fair amount of the custard. Repeat twice, then top with the remaining Parmesan.
Simple... of course I'd need a good salad on the side. For the record, I have used cranberries this way and I love them... and they add a dimension of color which is very appealing, at least to me. I would also consider using a bit of ricotta in this but again, it can be done without it.
Hurry back, Elaine :)
Use all ingredients to make Turkey-Cranberry Lasagna.
Extras: ricotta, 4 cheese Italian blend cheese, brown sugar
Roast turkey and slice. Layer cooked noodles, turkey, cheeses and broccoli. Cover and bake til hot and bubbling.
Meanwhile, simmer sugar and cranberries.
Serve lasagna with cran sauce.
But then, I like dried cranberries sprinkled on salads and stuff, and my grandmother makes a broccoli salad with dried cranberries in it that is to die for.
I don't think I'd eat it with the tomato sauce, after I thought about it, that's why I changed it and put an extra cheese in there instead.
It would be a lot like a cheesy turkey and broccoli casserole.
And I LOVE dried crans on salads! With some gorgonzola or bleu cheese... Yummay!
You know.. all of those ingredients would be good on a pizza too, without the lasagna noodles, of course.
Shannon, I forgot to take pictures, but I will be making them again soon and will take a picture then. DH has just raved over how good they were.
Never thought of pizza, Tina. And I have heard of places that put pasta on one. No thanks!
Bake the turkey breast, and chop the meat when tender. Mix the turkey, and brocoli florets with the alfredo sauce and spread onto cooked lasagne noodles, roll the noodles and place in a square pan, top with more sauce and shredded swiss cheese. Bake.
In food processor place washed cranberries, peeled oranges and pulse until chunky, add enough sugar to sweeten, serve with pasta.
I'm always a chicken when it comes to fruit sauces for some reason. I have to get over that.
Roast the broccoli with some olive oil and serve it on the side, KellyJo ;)
Thanks, ladies.
