It another focaccia kinda day.....I had just finished making croutons with the last of the LAST batch of focaccia....was tossing about the kitchen , trying to figure out a way to use up last weeks groceries before I go shopping this week. I wasn't in the mood for anything heavy and nothing was matching up....till I found the last of the parmasan sauce and a chicken breast.
On of the greatest things about focaccia is its versatility....One great recipie, three great food items.
So I whipped up one batch of my favorite focaccia( plain garlic this time) and them went on a scavanger hunt....
The chicken pizza utilized one chicken breast, parma ragu sauce, 1/4 of a large onion about a cup of italian blend shredded cheese and some fresh oregano from the hot house.

The breadsticks were cut with a pizza blade twisted a bit and doused with garlic powder and salt

The third item, a loaf of sweet salsa was made by slathering a small amout of sour cream onto the top of the foccacia and about three tablespoons of Harry and David's pepper and onion relish( yeah yeah..I DO live for this stuff) and about a cup of shredded sharp cheddar cheese.

The three items were formed and baked in succession, pizza, breadsticks and then the focaccia loaf at 400 degrees...
this makes for some lovely left overs for lunch.....OH YEAH

I used to wonder how I could go to work every day and do this sort of stuff and not want to when I got home.
NOW I know. I still love it...but it takes time to play. You have to want to stay at home and mess with things like this. And this is the first time in my life where HOME is where I want to be.
