Frist thing is when I am winding my bobin I the thread gets all bunched/ laggy and ends up looking like this:

I end up winding the thread off the messed up bobin onto a new bobin becasue when it comes out looking like that and if I use the bobin as pictured above it messes up my sewing big time..
Second thing is I am making purse handles and have been pressing the edges over 1/4 inch on both of the rough edges then I fold the fabric in half so the two pressed edges are together and I sew it. I took a photo cause my description is rather unclear:

Anyway I am looking for an easier way to go about doing the handles, any suggestions?

If your fabric is not too heavy, the easiest way for those handles is to cut your fabric 4" wide. Take it to the ironing board, fold the handle fabric in half and press a crease. Open it up again and fold each edge into the center; press. then fold it back in half again--you will have 4 thicknesses and no raw edges to fight with. Top stitch both edges.
