This is the bread I made in the bread machine to go with stuffed shells and asparagus. It made a 1 1/2 pound loaf. It turned out SO soft!
1 cup water
1/2 cup cottage cheese
2 T olive oil
3 1/4 cups bread flour
1/2 cup shredded cheddar cheese
3 T Parmesan cheese
2 T sugar
2 t garlic powder
1/2 t salt
1 1/2 t bread machine yeast
Place ingredients in bread machine according to manufacturer's instructions. Process on white bread cycle.
Served with butter.

I'll be going to the Italian section of Brooklyn when I'm up there and purchasing the nice fresh righout of the oven from the bakery semolinas, lard bread, etc etc and freezing them to come home. When you defrost and warm them in the oven, they are as fresh as when first purchased. Wrap them in foil first.
Now that you know my secret, I'll send you my addy and you can freeze some of yours and send it to me. I'll bet it beats even Brooklyn's little Italy, lol.

Trust me, when you get a bread machine you will want to experiment.
I put the cheese in with the dry ingredients. Never thought about doing it later. I might try that next time.
