Intoxicating, earthy aroma's filled my home today! This is a recipie for a nice lazy day at home, great for starting early, not much bother, just need time to let it slow cook.
You will need 1 large pot.
cross cut beef shanks
olive oil
sun dried tomatos
potatoes
onion
celery
carrots
fresh garlic
and seasonings


Beef Shank, season lightly and sear both sides over high heat in olive oil.
Reduce heat to medium and pour in 1 cup of water, and begin to simmer.


Slice up two cloves of garlic, 1/4 of large onion and add to the pot.
Slice 5 pieces of sun dried tomatos, add to the pot.
Add 4 Tbls of Ozark Fire piquante, cover the pot and continue to simmer.


Quarter 4 medium red skin potatoes
Cut up 3 stalks of celery
Cut up 4 large carrots
Lay the root veggies on top of the simmering meat and sprinkle generously with chili dill salt seasoning.
Reduce heat to very low simmer, cover and cook undisturbed for 4 hours.


I made a loaf of Onion Poppy Seed Focaccia( I have previously posted the recipie here on Gather) by sweating some diced onion and adding it to the dough with poppy seed and slathering the top of the loaf with sour cream and sprinkling with poppy seed and tossing on some sliced onion.

ENJOY!


Made an extra loaf for lunch sandwiches too!

This afternoon I took the left overs with the gravy I had made added two cups of water, a half can of diced tomatoes and a cup of frozen peas and had a wonderful stew for lunch.
