Dinner doesn't get much easier than this simple and healthy fish recipe. The only changes I would make is adding a more flavorful seasoning than parsley; for example, Old Bay, or a sprinkling of fresh herbs.
Also, as pointed out by Julie in the comments, cooking for 30 minutes is way too long. Tilapia shouldn't take more than 15 minutes, tops.

Also, when buying spices, do you think it matters if they are off brand? I know I buy garlic name brand. I prefer to use fresh garlic, but sometimes don't.

Marsha, I just used some of that Mrs Dash lemon pepper on my burgers and I really liked it!
