Mixed Salad Greens with New Potatoes
Lately I have been trying to limit calorie intake. It must be working, as my stomach seems to be shrinking. I definitely cannot handle as much food as I used to. Also, all this calorie counting is helping me to eat more mindfully and consciously.
Here is a lunch I prepared yesterday, carefully scooping out my portion to equal approximately 370 calories.
In order to obtain this calorie count use ingredients as follows in one portion of salad. If you can get organic, all the better.
4 small new red potatoes in jackets (boiled) - 110 calories
3 jumbo black olives (pit less) - 25 calories
1/4 red bell pepper cut into strips and sautéed in tsp. Of olive oil - 40 calories for olive oil, red pepper - approximately 20 calories
Baby spring greens mix with herbs (2 cups are only 20 calories)
Sprinkling of Gugi berry power mix (50 calories)
Sprinkling of Gorgonzola cheese (35 calories)
2 tbsp. of Italian salad dressing (70 calories)

And thanks, Minnie. I've gained weight since last year. I have to do a lot of walking to even keep my weight manageable, but last spring I over did it and hurt ligaments in my foot, which curbed any exercising greatly. I tend to go up and down, mostly up. Also, whenever the camera is aimed at me, I turn sideways and put half my body behind Chris, when possible.
Also, I hate cold and have to make myself go outside in cold weather. I endured this morning and made myself hike the whole 5 mile path.
