Weight Watchers Dining With the Duchess - Making Everyday Meals A Special Occasion by Sarah, The Duchess of York and Weight Watchers 1998
I first checked this one out from the library and later found a used copy, which I bought. I have tried several of the recipes. The Honey Dipped Crunchy Chicken Nuggets were very good and I have included the recipe but we didn't care for the Not So Devilish Eggs - I think they contained a little too much curry for our tastes.
Dining with the Duchess, combines the Duchess's taste and style with the culinary and dietary expertise of Weight Watchers. There are thirty menus included with around 125 recipes. The recipes are easy to prepare. The recipes are for the 1 2 3 Weight Watchers Plan. Also included for each recipe are POINTS per serving. Recipes include the basic nutrional breakdown as well as helpful cooking and presentation tips and hints. This cookbook is perfect for who wants to prepare light, healthy, and delicious meals. There are personal stories from the Dutchess included before each menu, letting you get a glimpseinto her life.

Honey Dipped Crunchy Chicken NuggetsRecipe By :Sarah the Duchess of York and Weight WatchersServing Size : 10 3 tablespoons honey 1 egg white -- lightly beaten 2 pounds boneless chicken breasts -- cut into 1 1/2" chunks 1 cup cornflake crumbs 1/2 teaspoon salt 1/2 cup reduced fat mayonnaise 1/4 cup dijon mustard
Preheat oven to 400. Spray large baking sheet with non-stick cooking spray. In a large bowl mix 1 T. honey and egg white; add chicken. Stir to coat. Transfer chicken to colander and set over large bowl.On sheet of wax paper combine cornflake crumbs and salt. One at a time dip chicken pieces into crumbs and then place on baking sheet. Spray tops of chicken lightly with non-stick spray. Bake until chicken is cooked though 8-10 minutes.Meanwhile in a small bowl, mix mayonnaise, mustard and remaining 2 T. honey. Serve nuggets with dipping
