A Recipe a Day- Mini Meatloaves

I am not a big meatloaf eater, but lately I have been thinking about making some for Matt.

The only changes I would make in this particular recipe, from Allrecipes newsletter, is to use a lean mix of ground beef, and stir in some minced onion and steak seasoning for more flavor. I think meatloaves tend to be very greasy and unappetizing. 

I like the addition of the cheese and oats and the ketchup glaze. 

If you have mini bread pans, use those for easier shaping and for uniform size loaves.

My husband always asks me to use my mother in-laws recipe...it is very good, maybe I should share it here as well. I think I will try this one without telling him and see if he realizes that it's not the same :o) I always use lean meat. I have a couple of slow cooker recipes for it, but because of the grease bath that it would be sitting in the whole time I haven't tried it yet...have you made one that way? Is it greasy?

I love my meatloaf...and I also use steak sauce and lots of onion ...

love it even more now that we get our ground beef from a really high quality place... we got a quarter cow.... what a HUMUNGOUS difference from grocery store meat.

Thank you! I like meatloaf with homemade mashed potatoes, but don't make it often since DH doesn't care for it. Sometimes he has to either take it or leave it....

Tara, this is similar to my mom's. Still kinda greasy, that is why I would lean it up a little. I have also made it with slices of bacon on the top and bottom. Now that is super greasy!

They do freeze nicely, Viv.

Steak sauce sounds excellent, Flit. That is the way my parents used to buy meat. They had a huge freezer just for meats. Good ole days, those were ;)

I think I will make some mashed potatoes to go with this. We have everything I need.

I like mini meatloafs, they are quicker to make and cook so you can get dinner done faster. Great idea.

Meatloaf... now when did that group come out?

There's almost nothing one can do with ground beef that will make me eat it. This would be close, but no banana!

I love meatloaf. Adore it. Instead of making one huge meatloaf and cooking it for an hour or so, I make tiny meatloaf patties and cook them in a pan. Like hamburgers. My son prefers them to the real thing, cut in slices. I melt a slice of cheese over the top and it is like getting a much tastier burger.

There are a couple of recipes I prefer. I always include some kind of grain in them, not bread or breadcrumbs, and I always put catsup on top. That is definite.

Meatloaf was the 70's weren't they? Damn, we almost subsist on it, Sue. It's still affordable.

My husband has never liked meatloaf. But he likes burgers and ketchup!!! In my opinion, they're just not that different. Sounds good.

Sue, I think someone on Gather just recently posted a good meatloaf with turkey recipe. I bet it would be just fine!

I used to not like meatloaf but I like it now. I make mine with a mixture of beef and pork or sometimes ground turkey and beef. I also make mashed potatoes and cover the meatloaf with mashed potatoes so that when you slice it there is a layer of potatoea around 3 sides of the meat loaf...John loves it that way and he didn't used to like meatloaf either.

Ohhhh, my husband makes THE BEST meatloaf ever!!! And I was never much of a meatloaf eater myself. I'll have to post his recipe sometime. He adds all kinds of things to it - tomatoes, mushrooms, celery. It's tasty. He makes a sauce (I forget what it's called exactly) to put on the top. We always get two meals out of it. Next day we make meatloaf sandwiches with mashed potatoes in the middle. Mmmmmm.

Meat loaf rocks. I usually make 5 or 6 at a time, cook 1 and freeze the rest for future dinners.

I clicked on the link and it brought me here. Hmm. Well, now I'll click on the link on this one.
My mom's glaze was ketchup, brown sugar and Worcestershire sauce... I always hated her meatloaf because of the chunks of onion, but the last time I made some (my husband LOVES meatloaf!) I used ground sirloin and ground turkey, with egg, oats, grated onion (sense a theme here, Shannon?) and diced bell peppers, and then put her glaze on it. My husband said it was the best meatloaf he had ever had, and my son was nuts about it as well. Might stick with it...

I LOVE meatloaf - and yes, turkey makes a great meatloaf! I use a few breadcrumbs, an egg, lots of fresh herbs, onion, salt and pepper, and cranberries. One of the best meatloaves I ever had had a sassy fresh tomato sauce ( with chopped toms) drizzled down the center ----oh, wish I got the recipe! Thanks for a great article and conversation, Shannon!
