Place in an airtight container and refrigerate over night.
Use as a dipping sauce.
- Feel free to adjust the amounts to suit your taste.
- Some folks like a few dried pepper flakes for a little more heat
- you may add some toasted sesame seeds for a little crunch
- pickled ginger makes a nice counterpoint
- add a little lime juice if you feel it needs more acid
- Wasabi is an extremely strong condiment, so go slowly until you know how much you like.
- make sure you use cocktail or dry sherry as sweet or cream sherry is much too sweet
Enjoy,

as far as the infusions, tried, they make me sick too, as well as trying to remove them after cooking.

Good recipe. And yes, stick with the powder. Thanks for sharing, can't wait to see more stuff!
Try adding it to everyday recipes and see how it changes the taste, even of simple things like scrambled eggs.
