As most of you know, chilaquiles are my absolute favorite Mexican dish. If they are prepared properly that is.
This recipe, from my Yahoo food group, fails miserably and has no right to call itself chilaquiles. It's not that it would taste bad, but a more accurate title would be "Tex Mex" casserole or something along those lines.
First off, I would never add zucchini to a Mexican style dish and I think pinto beans would taste better than black.
And this would taste MUCH better if the tortillas were crisped first, either by frying or baking.
I do like the idea of using a prepared enchilada sauce. These are great time savers, and most of the brands available taste pretty good.

LOL Marianne! Maybe that's why I don't have a hangover that often. Most likely, I will have eaten something spicy prior to any drinking!

My favorite is chicken. Saute onion, chicken and the masala in some oil. Stir in tomatoes and simmer for a bit. Serve over white rice. Easy Indian style chicken!
