As always with JoAnna's books, this one starts with a poem by her Mother, Anges Carrington McAndrews. This book is divided into menus. Those menus are Meatless and Fish; Poultry; Beef; Pork Plus; and Entertaining: Sunday Dinners and Celebrations Meals. The final chapter is on making Healthy Exchanges work for you.
All recipes include nutritional information, as well as Diabetic Exchanges, and Healthy Exchanges. this book is perfect for diabetics, weight watchers, and calorie watchers, in addition to those using the Healthy Exchange program.

This is one of the few JoAnna books I didn't have, so I was delighted when I was able to pick this one up from paperbackswap.com. This is my first dish to make from it but I'm sure it won't be my last. I decided to make Hamburger Stroganoff, from The Luscious Russian Repast Menu. The other recipes included in that menu were Chilled Fruit Salad, Pimiento Green Beans, and for dessert Rocky Road Peanut Butter Pie. I made braised leeks to go with ours. The stroganoff was very good but I had to have two servings. Lucky I had enough weight watchers points for the day to do that.
Hamburger Stroganoff
serves 6
16 ounces extra-lean ground sirloin beef or turkey breast
2 cups sliced fresh mushrooms
1 cup chopped onion
1 (12 ounce) jar Heinz Fat Free Beef Gravy
2 tablespoons reduced-sodium ketchup
1 teaspoon dried parsley flakes
1/2 cup Land O' Lakes no-fat sour cream
3 cups hot cooked noodles, rinsed and drained
In a large skillet sprayed with butter-flavored cooking spray, brown meat, mushrooms, and onion for 8 to 10 minutes or until vegetables are tender. Stir in beef gravy, ketchup, mustard, and parsley flakes. Lower heat and simmer for 5 minutes, stirring often. Add sour cream. Mix well to combine. Continue simmering for 2 to 3 minutes or until mixture is heated through, stirring often. For each serving, place 1/2 cup noodles on a plate and spoon about 3/4 cup meat sauce over top.
HINT: Usually 2 2/3 cups uncooked noodles cooks to about 3 cups.

HE: 2 protein; 1 bread; 1 vegetable; 1/4 slider, 19 optional calories

Joan's Notes: Since Sarita doesn't eat beef of any kind, including beef gravy (due to an allergy), we used the lean ground turkey breast and Fat Free turkey gravy.

I used to make a hamburger stroganoff in the early days of college, then went vegetarian for several years. When I returned to a meat diet, I had to use a fresh sirloin in strips for the stroganoff. I still cook from some of the older books though just for the retro feel of it. It's all fun.
The recipe looks very good. Might have to try it. She was a very prolific writer and was constantly creating recipes and testing them out.
