This recipe came out of the old Betty Crocker recipe book from the 1960's or 1970's. I have many missing pages out of that book now, and I have never been able to find another one just like it. The new cookbooks are so different, using newer ingredients, more prepared foods in the ingredients. This has been my preferred recipe for Sweet and Sour Sauce for nearly 30 years!
Sweet and Sour Sauce
Ingredients for Part 1:
- Green pepper, diced
- carrot, thinly sliced and cooked
- garlic clove, crushed or diced
- onion, chopped
Cook the above ingredients in 2 Tablespoons of oil (Olive Oil or Canola) until the vegetables are tender.
Ingredients for Part 2:
- 1 1/4 cup chicken broth
- 1/2 to 3/4 cup sugar
- 1/3 cup red wine vinegar
Place the above ingredients in a medium sized bowl (microwaveable). I use the microwave to bring this to a boil and cook for 1 minute.
Ingredients for Part 3:
- 1-2 teaspoons soy sauce
- 2 Tablespoons cornstarch
- 1/4 cup cold water
Blend these ingredients together until the cornstarch is dissolved. Stir into the chicken broth mixture. Microwave until thick and bubbly. Cook for 1-2 minutes more. Combine with the vegetables in Part 1.
Add meat or serve with meat (cooked chicken, pork, beef, fish, etc.). Serve over hot rice or couscous.
Comments: I like to add pineapple chunks to this recipe, but since all of us don't like pineapple, I keep it on the side. Cashews make a great topping. I prefer to use about half the soy sauce recommended. You can also use a little less vinegar and a little more sugar if you like your sauce to be sweeter than sour.
This recipe can be doubled.
